homemade herb butters

Homemade herb butters are very easy to make and are full of flavour. Herb butters are especially delicious on breads, and crackers, but are a wonderful addition to any dish that uses butter (i.e. as a topping for jacket potatoes, on freshly steamed vegetables, over pasta). Almost any herb can be used for a homemade herb butter, so use whichever herbs you like best, or below are a few recipes to get you started. These recipes can be made using softened store bought butter, or why not try making your own butter from scratch with this homemade butter recipe?
Garden herb butter:
In a small bowl, combine 100g softened butter with 1 tsp each of fresh basil, thyme, and parsley (or other herbs of your choice).
Mediterranean herb butter:
In a small bowl, combine 100g softened butter with t tsp each of fresh basil and oregano, and add a pinch or two of chilli flakes. (wonderful on mediterranean or tomato dishes)
Lemony herb butter:
In a small bowl, combine 100g softened butter with 1 tsp each of lemon balm, and lemon thyme (a lovely addition to fish dishes)
Garlic & chive butter:
In a small bowl, combine 100g softened butter with 1 TBL finely chopped chives, and 2 cloves of minced or finely chopped garlic. (a favourite for jacket potatoes)
Parmesan, Parsley & Black Pepper butter:
In a small bowl, combine 100g softened butter with 2 Tablespoons of grated Parmesan cheeses, 1 tsp flat leaf parsley, and 1/8 tsp freshly ground black pepper. (a favourite for pasta dishes)
Lavender butter:
In a small bowl, combine 150g softened butter with 2 teaspoons ground or finely chopped lavender.
