make fresh lavender lemonade
Lavender is in flower from June until August, making it the perfect choice for a wonderfully refreshing drink to enjoy in the summer months. This is a very simple recipe, and can be enjoyed fresh, and can also be kept in the fridge for a few days. This lavender lemonade can also be frozen to make delicious frozen ice lollies, and ice cubes to complement fizzy drinks.

875ml water
4 TBL lavender flowers
100g sugar
125ml fresh lemon juice

method
Bring 1/3 of the water to the boil.
(2) Remove from the heat. Add the lavender flowers, stir, and steep for 10 minutes.
(3) Strain the mixture, making sure that all the lavender flowers are removed.
(4) Pour the strained mixture back into the pan, add the sugar and lemon juice, and bring to the boil, stirring continuously.
(5) Once thickened, remove from the heat, and leave to cool. Refrigerate and enjoy!
